Passion Fruit Lassi

I have a wonderful mother who saves every bit of her farm produce in various forms(read frozen mostly) for me, because she can’t waste a thing and she knows I will put them to good use. Passion fruit lassi is an outcome of this venture. I had some frozen passion fruit pulp and I decided to make some lassi out of them. Now most recipes on Passion fruit lassi, on the internet, has mango added to them and I wanted to experiment with new flavours (read empty my pantry and refrigerator). So I tried to use some rose syrup and mint and made two versions of passion fruit lassi. Despite the sugar used, the lassi is still quite tart and I liked the rose one to the mint version perhaps it is the sugar in the rose syrup that makes this lassi taste different. I made 6 bottles for the pics but you can actually dilute them and make 10 bottles. The summers in Bangalore is quite bearable these days but it’s time for summer quenchers and smoothies and Sarah loves them too so you can expect quite a few recipes for the same from our kitchen.

Ingredients for Passion fruit Rose Lassi

Passion fruit Pulp- 1/2 cup

Sugar- 1/2 cup

Rose syrup – 2 tbsp

Curd- 2 cups

Directions

Blend the passion fruit pulp with 1 cup water and strain the pulp using a sieve. Now add all the other ingredients to the pulp and pulse the lassi in a blender for 2-3 minutes. Serve chilled.

Note: You will see speckles in your drink this is passion fruit seeds blitzed, that came through the sieve. It does no harm in fact it enhances the appearance of this lassi.

Ingredients for Passion fruit Mint Lassi

Passion fruit Pulp- 1/2 cup

Sugar- 1/2 cup

Mint leaves- 1/4 cup

Curd- 2 cups

Directions

Blend the passion fruit pulp with 1 cup water and the mint leaves. Strain the pulp using a sieve. Now add all the other ingredients to the passion fruit pulp and pulse the lassi in a blender for 2-3 minutes. This lassi can be more tart than the other one because it does not have a component like rose syrup and it will be mint heavy but the strong flavour of mint will cut through the sharp, tart flavour of passion fruit.
